Chicken Fried Rice Recipe
Chicken fried rice recipe I have given here is the Chennai street food style recipe. It is very easy to prepare.
If u have cooked rice and cooked chicken, the recipe takes about only few minutes. When I was working in Chennai, opposite to my hostel was an Andhra hotel. I used to buy chicken fried rice from there apart from my favourite biryani.When I got married and when we were there in Chennai for few months, my hubby used to take me a walk after work and he also would buy me chicken biryani from street side hotel. So when I came to US with my husband, I prepared this recipe for a Christmas get together. And our friends liked this very much and they asked whether we bought this from a hotel. Now I am sharing this recipe with you. Regarding nutritional information for this recipe it contains more iron, little calcium and small quantity of Vitamin A. Sadly the fried chicken is high in cholesterol. But I don't mind to eat it for one day.

  • Ingredients
  • Basmati Rice - 1 1/2 cup cooked
  • Oil - 2 tbsp.
  • Onion - 1 medium sized sliced
  • Cabbage - 1 cup tightly packed(chopped)
  • Egg - 2
  • Green Chilly - 1 chopped
  • Soy Sauce - 1/4 tsp.
  • Chilly Powder - 1 generous pinch
  • Pepper Powder - 1 generous pinch

  • For Chicken Fry
  • Chicken - 2 cup cubes
  • Salt - As Required
  • Orange Food color - 1 generous pinch
  • Chilly Powder - As needed
  • Chicken Masala -1 tsp.(Optional)

Direction

  1. Cook the rice and allow it cool.

  1. Cut the chicken into small cubes and marinate the chicken with above said 'chicken fry' ingredients and keep it aside for 15 to 20 miutes.

  3. Deep fry the chicken with enough oil. Since the chicken is cubed into small pieces, it takes only just 10 to 15 mins for frying.

  1. Heat oil in a pan and add green chilly. Then add onion. Do this in high flame, so keep stirring.

  3. When the onion is slightly browned, add cabbage, keep stirring fast in high flame. in another a minute or 2 add egg and stir well.

  5. When the egg is cooked, add chicken, then add rice and stir.

  7. Then add chilli powder, pepper powder, soy sauce and little salt. Mix well all the above for 2 minutes and switch off the heat. Garnish with green onion and serve.

    Notes:
  • Prepare the fried rice in high flame and keep stirring. After adding egg, if it start to get black, lower the flame, otherwise do it high flame whenever possible in making this recipe.
  • Use boneless and skinless chicken
  • You can use spring onion whites while sauteing with cabbage.
  • I pressure cooked the basmati rice with 1.5 cups water. Once cooked, it was sticky. But once it is cooled and mixed with other ingredients, grains were separated.
  • If you add more soy sauce, it's flavor will dominate.
